I love this pan, but I have to agree with the other reviewers comment on the glass lid. Food can get into the crack in between the glass and the metal at the edge of the lid. I use a nylon bristle brush after leaving my lid in hot soapy water dith a drop of clorox to get it clean, but I can see how some people would not want the trouble. Luckily, I rarely use the lid in such a way as to get it very messy anyway. The Unison series and the Commercial series from the same company does not have this problem.
Back to the pan, the non-stick surface is very hard, and I have had mine 5 years now and it still looks great. The metal conducts the heat evenly, and the handle does not get hot, depending on how you use it. It is not dishwasher safe and requires hand washing, but it is very easy to wash these pans.

terrible lid design - M. Cameron - Rye, NY USA
The trouble with this pot is that food eventually works its way between the glass lid and the lid's metal rim. Because of the lid's design, there's no way to remove this food, so it sits there, no doubt forming an excellent growth medium for bacteria. I ended up throwing the pot and lid out.

Great pan - omletes slide easily, burgers brown nicely, home made fried potatoes turn out perfect, and any veggies prepare just fine. Wiping, washing, and cleaning is easy. Slightly preheat it before using for best results. It will also keep the heat after you turn off your stove. This pan is a multi use pan, and if you have one, you don't really need any others, may be just second of the same.

This is a very nice pan, it cooks very well, with no sticking. Would have given 5 stars but it scratches so easy and I use nothing but plastic or wooden utensils.

Using just a small amount of oil nothing sticks. Most teflon pan peal and teflon gets into the food. Anodized aluminium gets away from teflon.

Sigh... What wonderful pots. They conduct heat fantastically, look smashing, and are just a joy to use.

Cleaning-
Initially, after cooking a few meals I became quite distraught at the staining and phantom residue that the pans were retaining. Scrubbing with a scouring pad didn't work and soaking proved fruitless. Inside of two weeks the pots looked "used."

With nowhere else to turn, I decided to purchase the product Calphalon RECOMMENDS for cleaning their pots, Bar Keepers Friend® Cleanser & Polish: 12 OZ.

Look it up on the 'net. This stuff WORKS. After using Bar Keepers Friend® Cleanser & Polish: 12 OZ my pots look BRAND NEW again. Don't forget to pick some up at the grocery store after you buy these pots. You won't be sorry.

Who would have thought that it's best to follow the manufacturers recommendations. ;)

I'm on a crusade against Teflon (as much as one can be lol) and love the look and the durability of stainless steel cookware. However, for some inexplicable reason, most stainless steel cookware has handles that are also stainless steel, so the handles heat up along with the pan. Seeing how this is a huge inconvenience for anyone who actually wants to use stainless steel pans, when I saw this set, with silicone rubber around the handles, I knew I needed them. (Also, I'd been using my grandmother's Farberware pots and the handles started becoming loose, and they DON'T make Farberware like they used to lol.) 9 is a lot, granted, but you get a lot in this set, and the glass covers and the cookware is of extremely high quality. The pots and pants heat up quick and evenly, and they're heavy, extremely durable, and dishwasher safe. Calphalon for the win.

I have owned these pans for years now and if you follow mfg., instructions they last for a long long time.

Two important things are to NOT cook on High and NOT to use cooking sprays.

They heat up qickly and hold the heat so you can actually finish the last few minutes of cooking while the gas or electric is turned off. The pan hold the heat so wonderfully.

Eggs stick to this pan. - M. Fischer - Fort Collins, CO USA
This is a well made pan. It looks and feels good in the hand, BUT, it is NOT non-stick, at least for eggs. When I'm done making scrambled eggs it leaves a layer of egg stuck to the pan, just as much egg is stuck as is in my 8" stainless pan. I have a larger Calphalon One pan (13" or so) and eggs do not stick to it. I'm not sure what the difference is, but I know this one is a mess to cook eggs in. My wife has resorted to using the 13" monster pan even to cook one egg rather than trying to clean this one.

I have a set of Calphalon One frying pans. I needed to replace the 8 inch fry pan because the one I have been using for nearly 5 years was starting to show some wear. The new Calphanon One Infused Anodized on appears to be exactly like the one I currently have. Although the product is very well made, I notcied that when cooking the new frying pan, I am having a problem with things (frying eggs) stick to the bottom while cooking. It cleans up fine, but I did not have the same sticking issue with the older pan. I still like the new pan and it cleans up easily, I am a little dissapointed with the sticking issue. Maybe it will get better with a little more use.

I've had this little pan for a couple of years. It heats quickly and evenly. It's very easy to clean except around the rivets. If I had it to do over again I wouldn't buy calphalon one because it has scratches all over it. I'm not a mad man, I don't dig into it, I'm middle aged, and I've used a lot of different pans in my time. This one needs plastic utensils or it will scratch. At some point in time I'll replace it because I don't like the idea of ingesting the coating, but I don't want to keep spending 0 on pans that scratch.
