What Happens When You Cook Eggs

When you heat a whole egg, its protein molecules behave exactly as they do when you whip an egg white. They unfold, form new bonds, and create a protein network, this time with molecules
of water caught in the net. As the egg cooks, the protein network tightens, squeezing out moisture, and the egg becomes opaque. The longer you cook the egg, the tighter the network will
be. If you cook the egg too long, the protein network will contract strongly enough to force out all the moisture. That is why overcooked egg custards run and why overcooked eggs are rubbery.

If you mix eggs with milk or water before you cook them, the molecules of liquid will surround and separate the egg's protein molecules so that it takes more energy (higher heat) to make the protein molecules coagulate. Scrambled eggs made with milk are softer than plain scrambled eggs cooked at the same temperature.

When you boil an egg in its shell, the air inside expands and begins to escape through the shell as tiny bubbles. Sometimes, however, the force of the air is enough to crack the shell. Since there's no way for you to tell in advance whether any particular egg is strong enough to resist the pressure of the bubbling air, the best solution is to create a safety vent by sticking a pin through the broad end of the egg before you start to boil it. Or you can slow the rate at which the air inside the shell expands by starting the egg in cold water and letting it warm up naturally as the water warms rather than plunging it cold into boiling water--which makes the air expand so quickly that the shell is virtually certain to crack.

As the egg heats, a little bit of the protein in its white will decompose, releasing sulfur that links up with hydrogen in the egg, forming hydrogen sulfide, the gas that gives rotten eggs their distinctive smell. The hydrogen sulfide collects near the coolest part of the egg--the yolk. The yolk contains iron, which now displaces the hydrogen in the hydrogen sulfide to form a green iron-sulfide ring around the hard-cooked yolk.

Terracotta Clay Bakers Bakeware Care Guide

Many consumers have emailed me on the use and care of terracotta cookware. They have said: "OK, I purchased my clay bakeware, now what?"

Excellent question and I will try and help.

Before using your terracotta cookware for the first time, wash thoroughly with hot water. Do not us soaps.

Each time you use your clay bakeware, immerse both the top and base in cold water for about 15 minutes. Pour off excess water. After adding all the ingredients place your terracotta bakeware in the center of a COLD oven.

DO NOT ADD COLD LIQUIDS once the clay cookware is hot.

DO NOT PLACE your terracotta bakeware over on open flame or hot cooking plate.

Regular recipes can be converted for clay pot cooking by increasing the cooking temperature by 100F and deducting one-half hour of cooking time.

Terrcotta bakeware is ideal for the microwave. Because microwave ovens vary to such a great degree, use the oven manufacturer's guidelines for cooking times.

Take care not to shock by clay pot cookware by moving it from one extreme temperature to another.

Use pot holders or oven mitts to move your terrcotta bakeware when hot, and place it on a trivet, mat or folded dishtowel when moving it out of the oven.

Cleaning after use: use hot water only, and a stiff natural bristle or mylon brush, or a nylon scouring pad to clean your clay pot cookware after each use. DO NOT USE SOAPS. A little baking soda will cut any grease. Never use cold water when the terracotta bakeware is hot.

When not in use, keep your clay cookware in a place where the air circulates. Place lid upside down on top of base when storing, to allow air to circulate inside the bottom of the roaster.

Use one clay pot cookware for fish and a separate one for meats, to keep the flavors separate.

In summary:


Hand wash your terracotta bakeware in hot water with some baking soda and a nylon or natural bristle pad or brush.
Do not wash with soaps or detergents.
Always place your clay pot cookware in a COLD oven.
Take care to avoid extreme temperature changes, ie. placing it in a hot oven.
Never pour hot liquids into a cold clay pot cookware, or cold liquids into a hot terracotta bakeware.
Always pre-soak for 15 minutes.
Avoid open flame or hot plate.

Clay pot cooking saves time, reserves nutrients and vitamines, avoids excess fats in cooking.

Terracotta bakeware for healthy natural cooking.

    Beneficial Things To Know About Cast Iron Cookware

    Cast iron cookware has been around for thousands of years, dating back to ancient china. In the middle ages over in Europe cast iron was considered just as valuable as other riches of the era, such as jewelry and gold. Cast iron products manufactured in the United States was one of the first industries that was organized. It is not as popular today because of the advancement of other metals but is still widely used for cookware because of it's conductivity and durability.

    Cast iron cookware has been one of the longest lasting types of cookware if not the longest lasting type of cookware out there. There are preseasoned and enameled products out there today. Cast iron cooking products come in wide variety of shapes and sizes, not just for pans and skillets. You can find dutch ovens, roasters, muffin pans, corn bread pans and more. Because of technology, the iron alloys used in todays cast iron has improved it greatly, adding more strength and durability.

    Original cast iron pans still need to be preseasoned as they rust easily and food will stick to it. To preseason your pan preheat your oven to 250-300 degrees. Coat the pan with some type of fat such as lard or bacon grease, you can also use "manteca" a type of lard used in mexican cooking. Avoid using a vegetable oil because it will leave a sticky coating on your pan and will not be seasoned properly. Coat your pan with the desired animal fat ( grease )and put into your preheated oven. After about 12-15 minutes remove the pan and discard any excess grease and return to your oven for 2 hours. This ensures that your pan has absorbed the grease into the pours of the metal. It is recommended that this procedure is done a few times to strengthen your seasoning bond.

    If you have an old cast iron pan that has been rusted or food is sticking to it don't throw it away, it can be salvaged. Simply heat the pan to a temperature that you can still work with as this will open the pours of the metal and then use a scouring pad and hot soapy water to clean it. Dry your pan thoroughly and then reseason. If it is really rusted bad try using salt when scrubbing your pan, this will help with rust removal.

    Always keep your cast iron pans dry when you are not using them. Clean them while they are still hot with hot water, no soap because it will break down the seasoning. Don't use anything abrasive when cleaning such as steel wool because this will scrape off your coating. You will not want to cover your pans with lids as moisture can collect which can start to rust the metal. Try not store food in them either as acids from the food will react with the metal and break down the seasoning and the food will take on a metallic flavor.

    Over all cast iron is great for cooking and baking. Because of it's conductivity it is perfect for browning and frying. It is relatively inexpensive but it is heavy. It is the perfect type of cookware for camping because it is so durable and will hold up to campfire cooking. It is great for cajun style blackening and searing. I believe everyone should have at least one cast iron skillet at there disposal.

    What is Waterless Cookware and Why Would I Want It?

    Waterless cookware is multi-ply stainless steel cookware that has tight-fitting lids. With a basic set of this cookware, you start on medium heat, and when the lid starts to flutter, you turn down the temperature to low. The more expensive sets will have a valve or even a thermostat, when the valve whistles, you turn down the heat. With the thermostat you just watch the temperature. When you cook with Stainless Steel Cookware you sear the foods; searing is actually what releases the food from the cooking surface. When you cook this way your meals are healthier and tastier and cook a lot faster.

    When talking about this type of cookware people often ask "What do you mean Waterless Cookware Sets?" These sets use lids that are heavier than your standard lids, the extra wait allows for a better seal. With a tight seal between the lid and your cookware, all of the natural moisture is retained in the cooking chamber. So you can cook with either no additional water or a very small amount, depending on what you are cooking.

The reason for this is that surgical stainless steel is non-porous. When cooking with aluminum or some other materials, as it gets older it starts to break down, and can leach metal or other products into your food.     Cast Iron Enamel Cookware is the Perfect Choice for Fall Comfort Food

    On a recent chilly fall day I had a hankering for beef stew, and the process of preparing it re-acquainted me with the old cast iron Dutch oven found years ago by my mother in an antique store, which I had since ignored and allowed to accumulate dust in the basement.

    While vigorously scrubbing it with steel wool, I was reminded of the whole reason the thing was banished to the basement in the first place. It's very difficult to clean, and like all cast iron cookware, it needs proper seasoning before you can use it. It can't be put in the dishwasher because the iron will rust, and must always be coated with a layer of fat in order to keep it properly seasoned. Cast iron enthusiasts regularly debate the merits of shortening versus vegetable oil as the perfect seasoning. In fact, the process of properly seasoning cast iron cookware is an art unto itself. Maybe achieving the perfectly seasoned cast iron pans is a rewarding experience, but who has the time?

    You may wonder why anyone would go to all that trouble. Cast iron has excellent heat retention properties that make it very energy efficient. You can achieve ideal cooking temperatures on medium and low heat settings, reducing the risk of burning or drying out your food. It is perfect for the long, slow cooking of our favorite comfort foods. When you remove the cast iron pot or pan from the heat source, it retains the heat for a long period of time, so your food will stay hot longer than food prepared in cookware made of other materials. The heavy, thick metal resists warping and lasts forever. These properties are why so many people, undaunted by hand washing and the need to keep it properly seasoned, swear by cast iron cookware.

    Fortunately, there is another kind of cast iron cookware that gives the cook all the benefits of cast iron cooking without the drawbacks. Cast iron can be enameled, a process that seals the iron in layers of vitrified enamel. This process has numerous benefits. It eliminates the need to keep the iron properly seasoned. The smooth, glassy finish of the enamel is much easier to clean, and cast iron enamel cookware can be placed in the dishwasher. The smooth finish also allows you to safely use this type of cookware on all types of heat sources including ceramic and induction cook tops. The enamel layer allows you to cook with tomatoes and other acidic ingredients that usually react unfavorably with cast iron. And the enamel can be produced in any number of colors, like fire engine red or lemon yellow, making it a perfect choice for today's design-conscious kitchen. It's so attractive that your stew or roast cooked in a cast iron enamel Dutch oven can go right from the oven to the tabletop.

    I ended up making my beef stew in my old Dutch oven and it was indeed one of the tastiest stews I ever made. It simmered gently in the oven for hours and stayed piping hot when placed on the dinner table. But unfortunately, the cleanup process confirmed that it was going right back down to the basement. Now I have a set of attractive enameled cookware hanging from my kitchen pot rack (with a matching Dutch oven), and my antique cast iron Dutch oven is again in need of a good dusting.

    Dutch Oven Beef Stew

    1 tablespoon vegetable oil,

    2 pounds boneless beef chuck roast, trimmed, and cut into bite-sized pieces

    8 ounces kielbasa, sliced in half lengthwise then sliced into bite-sized half circles

    2 onions, coarsely chopped

    1/2 teaspoon garlic salt

    freshly ground black pepper, to taste

    1 cup dry red wine

    1 (10 ounce) can condensed cream of mushroom soup

    1 (10 ounce) can condensed cream of celery soup

    1 (8 ounce) can diced stewed tomatoes

    5 medium potatoes, peeled and cut into bite-sized cubes

    2 cups carrots sliced into bite-sized rounds

    1/2 cup barbecue sauce

    1 cup frozen green peas

    1 (8 ounce) can lima beans, drained

    Pre-heat oven to 300 F. In a large Dutch oven with ovenproof handles, heat the vegetable oil over medium-high heat. Add beef to the Dutch oven and brown well, stirring often. If your Dutch oven is rather small, do this in batches rather than trying to brown all the beef at once. Return all beef to the Dutch oven, add onion and kielbasa. Saute until onion is translucent, stirring often. Stir in garlic salt and pepper. Add red wine and stir to loosen browned bits. Stir in both canned soups, tomatoes with their juice, potatoes, carrots and barbecue sauce. Stir well, cover and and bake in oven for at least 3 hours. Before serving, remove the Dutch oven and place it on the stove over medium-high heat. Reduce, stirring often, until sauce thickens to desired consistency. Add green peas and lima beans and stir until heated through. Serves 10.

    I love chicken fajitas and order them when I go out. When I saw this, I knew that I really enjoy it. It is small enough that storing it isn't a problem, even in a small apartment. It is also pretty affordable, whether you get it for yourself, give it as a gift or receive it as a gift.

    For the price it's OK. The product looks just as it does in the photos. It's described as heavy duty aluminum, but that's not how I would describe it. If your looking for a cheap set that you don't plan on using much, this set should be fine. I was looking for something the kids could use throughout scouting and feel like this set may last a few summers at best.

    The World Of The Tea Kettle

    People who are not regular tea drinkers sometimes get the various bits of tea terminology confused. You would be amazed at how many times I have heard others get all mixed up when it comes to tea kettles and tea pots. They use the terms interchangeably, and it's enough to make a true tea connoisseur react as if hearing fingernails run down a chalkboard!

    Tea pots and tea kettles can sometimes look a lot alike, and maybe that's why the confusion got started in the first place. But these two items are most definitely used for different functions in the tea lover's world!

    A tea kettle has been designed to use on top of a stove or hot plate to heat water that has been placed in the kettle by the person who desires the hot water. Once the water has come to the proper temperature, it is usually used to make tea, although it could be used for any purpose where very hot water was needed.

    A tea pot is a container which is sometimes quite decorative and sometimes very plain. It is used strictly for brewing tea with hot water and either loose tea or tea bags. Generally, you can not use a tea kettle on the stove or over an open fire.

    Generally, a kettle is a type of pot that was the brainchild of someone who needed a proper utensil to use over a fire or on a stove for cooking purposes. The word "kettle" was derived from Latin. "Catillus" is Latin for "a deep dish or pan used for cooking". You can search back in history for kitchen lore and find that every home, be it rich or poor, had a kettle of some sort in the kitchen.

    It was a type of cookware that was an absolute necessity. As time went on, some people saw a need for kettles a bit smaller than the monstrous ones that had become a kitchen staple. They wanted something that could be used specifically to boil water in order to prepare tea, both by the cup and by the pot. Thus, the first teakettle was born.

    By the time we reached the 20th century, various forms of kitchen and cookware had come and gone, but the tea kettle and the tea pot were two utensils that had not faded into the background of culinary history. Instead, they had become even more useful and indispensable.

    What is a tea kettle made of? Those tea kettles which were made to sit on a open flame of course had to be fashioned from a material which could withstand the heat. Different types of metal fill the bill quite nicely. Stainless steel, copper, and chrome plated are all popular. The design of your basic, generic tea kettle has a well fitting lid which easily comes off so that you can put water in the kettle, a spout for ease it pouring the heated water out of the kettle, and a sturdy handle so that the tea kettle can be lifted from the heat and moved from place to place if desired.

    An important part of the handle's design is heat proofing. You want a handle that will not get too hot for you to grasp and hold. Many of the cheaper tea kettles do not offer this option, and it is sorely missed by those who have become used to it, most especially when they are nursing a burned hand as a result of expecting a heat proof handle on a tea kettle and discovering the kettle in question does not have one!

    Some tea kettles are equipped with whistles, which let out a piercing sound whenever the water has begun to boil. People can be really funny about these whistling tea kettles! They either love them dearly or hate them severely, with no in-between emotions. The whistle can come in handy when you aren't going to be able to stay in the same room with the tea kettle - at least you will know when the water is ready for tea making when you hear the whistle! Tea kettle purists say there is no need for such a whistle, and that it distracts the mind from the true purpose of the kettle, which is to bring the water to a quick boil.

    Believe it or not, you can actually find replacement whistles for tea kettles! And, you can also purchase a tea kettle whistle that you merely place onto the spout of a tea kettle that started out with no whistle at all. The most popular type of tea kettle whistle is made in the shape of a bird in flight, and is bright red in color. The notes of this whistle are clear and bright, quite a lot like a bird song.

    You can also find tea pots that can also be used as tea kettles because of the material they are crafted from. There are some lovely ones made from cast iron that will do double duty as a tea kettle. You also might want to consider an electric tea kettle like most British tea lovers use. Normally, these will bring water to a boil in half the time of a regular tea kettle, and the prices for the electric models are quite reasonable.

    Venison Country Pepper Steak

    Deer hunting season is over and you have venison to deal with. What do you do? Here is what my hunters do. The venison should be left to age for 10-14 days in temperature between 35-42 degrees without the hide before processing. If the temperature is warmer than that the meat is cut up and refrigerated, canned in jars or frozen. Some is ground up for burger. Some is made into sausage after the steaks and roasts are cut.

    The tenderloin rarely makes it to the freezer as it is the easiest and quickest to cook. I slice it into 1-inch pieces, butterfly it and fry it up with onions and mushrooms. Venison burger mixed with ground pork is delicious. I never mix the two together before freezing as venison will keep longer frozen than pork. I mix them just before cooking. Sausage meat is spiced, put into casings and hung to dry overnight before smoking. The heart and liver are utilized as well, nothing is wasted.

    I have been cooking venison for many years. I have tried dozens of recipes and methods. This way is one of my favorites. I put the round steaks in a pan, pour buttermilk over to completely cover and let them marinade overnight or longer in the refrigerator. The next day I drain off the buttermilk and dredge the steaks with seasoned flour. I dice a few pieces of bacon and brown it in my cast iron pan. I add a few cloves of garlic and then I brown the steaks well and top with thinly sliced sweet onion. To that I cut red, green and yellow bell peppers into strips and layer them on top. Sometimes I add sliced mushrooms. Last I pour dark beer over the whole works, put the cover on and bake in the oven at 350-degrees for about an hour.

    The buttermilk will tenderize the steaks and you will be able to cut them with a fork. This marinade works well for grilling also.

    Cookware Materials And Heat Conductivity - What Should You Have?

    Stainless steel cookware, aluminum cookware, cast aluminum cookware, glass, ceramic, there are many choices and each choice has very different coefficient of conductivity. The old idea that the best heat conductor is the best cooking utensil to use may not always be true in all cases. We will look at the most popular metals used and the different construction variations that should help you make better purchases.

    The first data we will look at is the more popular materials used. We will also add a rating system on the ability of each material to conduct heat. Our rating system will be a scale from 0 to 10. The rating of 10 will be the best conductive material and a rating of 0 would be the worst. We will stay between the upper and lower scales. As we present this data remember the materials will also cool in relationship to how fast they heat.

    The material list follows: Copper rating of 9, Aluminum and Cast Aluminum rating of 5, Cast Iron rating of 1.5, Stainless Steel and Steel rating of 1, Ceramic rating of 0.5 and Glass a rating of 0.25. By the ratings it is very easy to see that copper is the best conductive material listed, and glass is the least conductive. The one problem with copper utensils is that it is reactive to acidic foods. To mention all of the important materials used in cookware, the list should also include copper clad and multi-ply utensils. The reason these are not listed is the conductivity will vary depending on the thickness of the copper clad or plate and the number of plies or layers in the utensil and the materials used in the layers. The two best choices for good heat conductivity are the last two mentioned, copper clad or multiple layered bottoms. Most all of the layered cookware has at least one layer of copper for good heat conductivity.

    To conclude the characteristics of quality cookware should be able to provide even distribution of heat. This can be achieved by material types, thickness and multiple ply construction. The cost of each manufacturing process will dictate the final cookware cost. Although copper cookware is the best heat conductor, copper also is the material that requires the most maintenance to remain with a great appearance. This would make the multi-layered bottom utensils best choice.

    Fun Fondue Dipping Sauces

    Fondue dipping sauces for fondue are part of making a successful fondue party. They offer a wide range of flavors, plus it adds interest to your dinner party or fondue gathering. In fact, a well rounded and well chosen variety of sauces is just as important to the success of your party as is the preparation of the fondue itself.

    It's not as hard as it sounds, since you can mostly make up the sauces well in advance of your party and merely bring them out when you are ready to serve.

    Just to make sure we are all on the same page, these dipping sauces, listed below are to be used with meat fondue, chicken fondue, or seafood fondue. Obviously, you don't need added sauces for Cheese Fondue - being that it is a sauce unto itself!

    A combination of 3 to 6 fondue dipping sauces is usually plenty to serve with your fondue. But, don't let that stop you, if more appeal to you and your crowd, then go for it! Make 10 sauces. Or 12!

    Try a combination of sweet and spicy and mild and tart. As I mentioned earlier, if you make up the sauces ahead of time, say, the day before, it helps to blend the flavors and frees you up for other preparations you have to ready yourself for your fondue gathering.

    Some recipes will require you to make them just proceeding your dinner, but not all. Just carefully follow the directions and the recipe will spell it out for you when you should make each sauce.

    Some fondues can also include other condiments besides the sauces you make. These are the easy ones! Teriyaki sauce, ketchup, chili sauce, mustards, meat sauces, pickle relish, chutneys and tartar sauce can all be found in your local store. Of course, if you are feeling a little Martha Stewart-ish, go ahead and make any of the above from scratch!

    Some of my favorite fondue dipping sauces are: Tomato Lemon Chutney, Sour Cream Mustard Sauce, and Chipotle Tartar Sauce. All of these dipping sauces are easy to make and you can find the recipes on my website, Easy Appetizer Recipes. Read my bio below.

    Fondue dipping sauces are like the icing on the cake. They add interest, sparkle and flavor. Experiment, try new sauces, make them up. It's really hard to mess up a sauce. If you don't like it, try another one. As they say, variety is the spice of life!

    How to Barbecue Better Using Cooking Grates

    Cooking grates come in different types and materials, and each has its own advantages, depending on its use and the preference of the cook. Grill grates hold your food when you are barbecuing or grilling. So let us take a look at the choices available when it comes to outdoor cooking grates.

    When it comes to popularity, cast iron grates seem to be the choice. The heavier wide cast iron grates can hold heat for a long time and cook evenly. As a result, you get well seared, quickly cooked food. The only problem with  iron grill grates is maintenance. Apart from the regular cleaning, you must ensure that cast iron grills are well seasoned before you use them and this must be done periodically even when they are in regular use. They do come with manufacturers instructions on how to season them. While it is not a difficult task to season them, neglecting to do it can result in rust. If you do keep them well seasoned, cast iron can be as good as nonstick grates and appear to last longer than a lifetime.

    A better option, if you want the advantage of longer heat but not the associated maintenance hassle with cast iron, you can opt for porcelain coated iron grates. These combine the quality of durability, as well as avoid the problem of rust as long as the porcelain coating is intact. Over time, the porcelain coating can crack, chip or wear off unless you are really careful when you handle it. At the time of cleaning, it is better to use brass bristles in place of metal scrapers with hard edges.

    Stainless cooking grates for grills are less durable than iron; however, with good care, these can also last a long time. You also get steel grates coated with porcelain just like cast iron grates coated with porcelain. One problem, however, is that these grates are quite thin and too widely spaced to hold heat. While this does not really affect smoking or indirectly cooking huge portions of meat, beef, steaks and chops could pose an issue since you will not get those attractive grill marks. Serious chefs prefer wider grates.

    If you compare stainless cooking grates for grills, porcelain enameled cast iron cooking grates and porcelain coated cast iron grates, porcelain coated cast iron grates let you cook at lower temperatures because there is longer retention of heat. Stainless steel grates come with the longest warranty followed by porcelain coated cast iron grates and the porcelain enameled ones.

    Generally, it is better to buy stainless cooking grates for bbq grills so that they are not prone to rust. Often we find barbecue grills that are perfect with all the features we want at a price that is hard to refuse, yet does not have the kind of grate we want. In such cases, you can always check with the manufacturer. For example, you can opt for Weber porcelain enameled cast iron cooking grates that give you the advantage of long lasting grates that retain excellent heat and are supposed to be easy to maintain. But most weekend barbecuers feel that it is hard to keep it seasoned because they get so heated. This manufacturer also offers the option of choosing stainless cooking grates for the grills.     How to Cook Cornish Hens

    My family loves it when I cook Cornish hens for them. Because of their diminutive size compared to other chickens, the kids think they’re cute. We all find the taste to be a grade above most other kinds of chicken, too.

    What most people in the United States know as a Cornish hen is really a cross-breed of poultry created from Cornish chickens and White Rock chickens. Technically, then, it should be called a Rock Cornish hen (or, to draw the name out even further, a Rock Cornish game hen).

    The Rock Cornish hens found in your supermarket usually will be of a size to provide about 1 serving of meat per person. Obviously, this makes it a cinch to determine how many to buy. Serving four? Purchase four hens. Cooking for a church picnic of a hundred folks? You’ll need a hundred of these little birds (plus a few to cover the people who will insist on seconds). And so on.

    Rock Cornish hens are best when oven-roasted. Roasting time varies, depending on the size and number of birds. A minimum time is 20 minutes, but most will require between 25 and 35 minutes and some will need 40 or 45 minutes. A good sign the hen is done is when you can stick a sharp knife or fork tine into it and the juices from it run clear.

    You can roast Rock Cornish hens as they come straight from the butcher or supermarket, but it’s better to rub them with herbs and spices first. Try thyme or rosemary along with a little salt and fresh-ground black pepper. Some cooks like to baste their hens with melted butter—this will help to brown it and will also add extra flavor. As the hen cooks, juices will collect in the oven pan. From time to time, just scoop up these juices and pour them over the bird to keep it from drying it.

    Aluminum Health Risks - Real Or Myth?

    For years we have been warned about the risk of aluminum in deodorants. A recent study reported by WebMD Health News indicates there may even be a link of aluminum in deodorant and other personal care products to breast cancer.

    Dr. Philippa Darbre of the University of Reading in England has found evidence that aluminum-based active ingredients in deodorants can mimic estrogen in the body.

    She goes on to state, "If the aluminum salts in antiperspirants enter the body and mimic estrogen, it stands to reason that constant exposure over many years may pose a risk."

    Most commercial antiperspirants contain aluminum. For years the discussions about risk of aluminum centered around Alzheimer's. This degenerative form of dementia mostly affects persons over 65 years of age.

    Some studies have found there are higher than normal concentrations of aluminum in the Alzheimer's brain cells. Other studies have either not been able to conclude this or are still questioning the results. However, it is known that large amounts of aluminum can contribute to nerve toxicity and therefore possibly Alzheimer's disease.

    The question becomes, can small amounts over time cause harm or is the danger only with one large exposure?

    It is easy to see how we can accumulate aluminum in our bodies, since deodorant isn't the only product that contains it. It is also found in many other sources including antacids, aluminum tubes used with some brands of toothpaste, baking powder, nondairy creamers, table salt, drinking water, and processed cheese. Aluminum cookware, of course, is also a consideration.

    It makes sense that small exposures on a daily bases could result in accumulation in tissues over many years, just as Dr. Darbre reports.

    Our bodies do not require aluminum. We also know what we rub on our skin, we do absorb into the body and bloodstream.

    Although there are no studies to this date that conclusively point to aluminum as a major cause for breast cancer and Alzheimer's, the results are not all in yet.

    If you are not a gambling person, you may want to choose your personal care products very carefully to avoid aluminum. Remember, cigarettes used to not be considered unhealthy. Today, we know better.

    Microwave Cookware - Making Cooking More Convenient

    Perhaps the most obvious testament to our fast-paced lives is the proliferation of the microwave oven and microwave cookware, for that matter. We have them in all shapes and sizes, and the simple convenience of using microwave cookware to "heat, store, and serve" has made these items indispensable in any 21st-century household.

    There is no lack of critics who look down on the fad that is microwave cooking. In reality, because fast-paced lifestyles are likely here to stay, microwave cookware may be more of permanent household fixtures than merely fads.

    They may not be handed down from one generation to the next as heirloom pieces, but microwave cookware are bought for practicality's sake. These days, most working men and women rarely have the time to do hour-long baking, roasting, or slow-cooking.

    It is common knowledge that microwave cookware is made of plastic, and the accidental use of metals creates the risk of the microwave oven breaking down in the long run. However, there are some metals which could actually be used for microwave cooking.

    Aluminum foil, for instance, could be used to wrap the ends of a turkey's or chicken's legs to keep these from burning. Its primary purpose is for shielding. Small skewers made of metal won't be a big deal, and microwave cookware such as shallow convenience trays lined with some metal won't harm the appliance.

    Keep in mind, though, that any microwave cookware with metal should be placed at least an inch away from the walls of the microwave oven. In addition, deep metal pans and cartons which are lined with foil are not used, simply because they keep the microwaves from reaching the food's core.

    There are various grades of plastic used in the manufacture of microwave cookware. Some are durable while others are good only for a few uses. Cheaper microwave cookware is usually not microwave safe, so it's best to go for the well-known brands. At least you are assured that big companies see to it that all their products go through quality testing.

    And because it is a known fact that microwaves travel in straight lines, square- or rectangular-shaped microwave cookware is better than round or circular containers. Choose shallow microwave cookware to ensure that microwaves reach even the interior parts of the food and not just the surface.

    Microwave cooking is generally safe if you follow cooking times and directions to the letter and use only the right microwave cookware.

    We have most of the classic Scanpan line of cookware. I own both sizes of woks. This smaller classic 11" wok is a nice size for small meals. If I am preparing a small stir-fry meal for my wife and I, or just something for myself, this is my "go-to" pan. I have had several steel woks and even an electric wok in the past. The Scanpan is my favorite for a couple of reasons. First, Scanpan has a great surface, and it is nearly non-stick. It's not as slick as Teflon, but it holds up well in the kitchen. My 15-20 yr old Scanpans have some chips in the non-stick surface, but every traditional non-stick pan I have ever owned needed to be replaced after a few years despite delicate treatment.

    I have an electric stove, and love to stir-fry on HIGH. I noted another reviewer said cooking on high seemed to change the surface of the pan. I haven't encountered that. I try to always have my food prepared before I start the heat. The pan won't burn if there is adequate food in it to absorb the heat.....and I stir like crazy at times!

    These pans are great if you need to "deep fry" small batches of something. The small bottom and high sides allow me to use just a small amount of oil and not get splatter all over my stove.

    And lastly, there is no problem with rusting like on the steel woks. When the food is done, we serve it from the wok, and whatever is left can stay in the pan. Our old woks would discolor or rust right away. As I have said, I own both sizes of Scanpan woks and have even given them as gifts to family members. They are the best woks I have ever used.

    About Green Tek Nonstick Technology:

    In the more recent past, the Environmental Protection Agency (EPA) has taken the leading manufacturer of nonstick compounds to task over excessive emissions of PFOA (Perfluorooctanoic Acid). PFOA has been used as a catalyst in the production of PTFE (Polytetrafluoroethylene), the basic building block for all nonstick cookware surfaces.

    PFOA is a chemical that is hard to break down in the environment. It has a half life of 3.8 years, meaning that if there are 4 grams of PFOA in the body today, the body will have 2 grams in it in four years from now, 1 gram in eight years from now and so on. The human metabolism does not remove PFOA. While it is not a carcinogen or toxin and is generally assumed inert and not harmful to your health, it is environmentally unfriendly and just sticks around forever. That is why the EPA and the leading nonstick manufacturer have agreed that by 2010, the amount of PFOA used to produce PTFE compounds need to be cut by 95%, and by 2015 no PFOA could be used, at all.

    Towards the end of this process, PFOA is completely extracted via ionization filters. Even if any traces of PFOA were still present by the time the nonstick compound reached the cookware factory, the pan surface curing temperatures would destroy such remnants. The same is true for the old nonstick compound used for Scanpan Classic and Scanpan Professional. That's why Scanpan has always been able to present the finished product as not containing PFOA.

    Why is Scanpan Environmentally Friendly?

    Scanpan cookware has always been PFOA free, but the negative publicity that PFOA and, by extension, PTFE had received over the last few years, had caused Scanpan to work closely with their suppliers to find a substitute for PFOA that is environmentally friendly and biodegradable.     Taking Care of Scanpan Classic Cookware:

    1. Before first use, remove all packing materials, labels and tags and wash pan in hot, soapy water. Rinse well and dry. Assemble the glass cover handle, if applicable, following the instructions on the poly bag that holds all handle parts. Tighten by hand, only, do not use tools. Make sure the small washer that goes on the underside of the glass cover is flush with the glass surface. If not, turn the washer around and re-assemble the handle.
    2. Heat pan to working temperature. Medium heat is typically sufficient for frying and sauteing. Since each stove top has its own settings, find the best heat setting for your stove by starting at a lower setting, then gradually increase until water splashed on the pan surface evaporates immediately with a sizzle. High heat can be used for other applications, like boiling water, stir frying, oven roasting etc. Scanpan Classic Cookware is oven safe to 500 degrees F.
    3. Scanpan Classic can be used without oil, butter, or other seasonings, making it especially suitable for low fat diets.
    4. After use, remove food and clean Scanpan Classic with warm, soapy water. Scanpan Classic wipes clean with a sponge. Scanpan Classic is dishwasher safe, however, Scanpan recommends using extra care if you decide to clean the pans in the dishwasher to prevent damage to plates, glassware, etc.
    5.     Just LOVE these things. Work on the road, so I'd normally buy one for cooking in motels from Calgary to New Iberia. Then give it away at the job's end. Now that the handle's more stable and heat resistant it's just about perfect. The plasma-embedded titanium ceramic means you'll still need some oil. But has none of the shortcomings of PTFE. You can find the same with slate-coated pure aluminum skillets for less at TJ or Marshall's, but here it's Scanpan's design features that seem superior. Don't even think about the price. I've had one for 18 years and you can see a few scratches in but not through the coating.

    I bought this one, but it was a little too big for my stove. So I returned it and bought 12 1/2 inch instead. So far I like it very much.



    Contains PTFE--same as Teflon - Power fish -
    I bought this pan thinking that I am buying a non-stick pan without Teflon. While the health issue became questionable concerning Teflon, I am willing to pay extra to be safe, and at the same time still enjoying the non-stick feature. The product description somehow suggested that the pan is non-stick because it's ceramic titanium.

    Well, I was wrong, and I didn't know I was wrong until I accidentally browse the company's website and read its FAQ. In their FAQ, it says: "The ceramic-titanium particles become one with the pan at that point. A subsequent application of a specially formulated PTFE provides the nonstick effect." PTFE is the problematic element of Teflon. Well, I wish the company discloses this information somewhere on the product!
